Paneer Stuffed Parwal

As the name suggest,this is indeed a very simple dish.The stuffed vegetables are very much liked by everyone now a days.Be it stuffed Karela,stuffed Bhindi,anything goes well.I prepared this on a Saturday afternoon when I invited my uncle and aunt for lunch.My uncle is purely vegetarian only on Saturdays.Although,I prepared many non vegetarian specials that day,there wasn't anything for him.Hence,decided to dedicate this one for him.Although,looks very simple,he really enjoyed.
Ingredients:
Parwal-8-9 Nos
Paneer-100gms
Oil-4-5 Tbsps
Turmeric-1/2 Tsp
Garam Masala-1/2 tsp
Chilli Powder-1/2 tsp
Salt-As per taste
Coriander-Few Sprigs

Method:
1.Cut each parwal into halves and deseed it.With just 1-2 Tbsps oil shallow fry the parwals so that its cooked (around 80%) on both sides.

2.Heat 1 Tbsp oil in a kadhai and add paneer to it.Add the masalas and toss for few mins.Turn off the gas and sprinkle coriander.
 3.Stuff each half pf Parwal with paneer stuffing.Once all been stuffed,put it in a preheated oven at 180C for 5-10mins.

Devil's Chocolate Cake

This cake is very special for me as I baked this cake on my first wedding anniversary.And now sharing with you guys as my 50th post.This has been the yummiest cake baked by me so far.When my brother's friends came over to my place;one of them complemented me by comparing this cake with Choco Indulgence of CCD.Wow!!that was awesome and I will always remember.

Ingredients:
Sugar-2 Cups
Flour-1 3/4 Cups
Cocoa Powder-3/4 Cups(I used Cadbury's)
Baking Powder-1 1/2 Tsp
Baking Soda-1 1/2 Tsp
Salt-1 Tsp
Eggs-2 Nos
Milk-1 Cup
Oil-1/2 cup
Hot water-1 Cup
Vanilla Essence-2 Tsp
Method:
1.Preheat the oven at 180c and grease two 9 inch round cake tins.
2.Sift the dry ingredients:Flour,cocoa,baking powder,soda and salt twice.
3.In a bowl add eggs,vanilla,milk and oil.Beat on a medium speed for 2 mins.

 4.Stir in the hot water and mix well.Immediately transfer the mixture into the greased tins.


5.Bake for 50-35mins or until the cake is done.
6.Cool at the room temperature.
Note:Prepare the cakes one day in advance.
Frosting:
Chocolate Frosting:
Dark Chocolate-85gms(I used Bournville)
Heavy Cream-2 Cups
Sugar-2-3 Tbsps

1.In a thick bottom vessel heat the cream along with the sugar.
2.Take a mixing bowl and add the chopped chocolate.Now pour in the cream-sugar mixture and stir in gently till the mixture is smooth.
3.Cool the mixture and store it in refrigerator.
Note:This mixture should be prepared one day in advance.

Butter Cream Frosting:
Butter-1/2 Cup at room temp
Powdered Sugar-3 3/4 Cups
Vanilla essence-1 Tsp
Milk-3-4 Tbsps
1.Cream the butter until light and fluffy.
2.Add the powdered sugar,1/4 cup at a time.
3.Once all the sugar is used,add the vanilla essence and milk.(Milk should be used to get the desired consistency)
4.Store in refrigerator.
Note:Should be prepared a day in advance.
Soaking Syrup:
Mix together 1/2 Cup of water and 1/2 Cup of sugar along with a Tsp of Rum or vanilla essence.
Assembling the cake:
1.Prick small holes on the cake with a fork.
2.With a pastry brush,apply the soaking syrup on both the cakes.Be careful not to add much otherwise it will become soggy.
3.Sandwich the cakes with the chocolate mixture and apply all over the cakes.
I made swirls using a piping bag.
4.Similarly make swirls on top using the butter cream frosting.
Chill it in refrigerator till use.

Egg Fried Rice

Yesterday night,I laid down a candle light dinner for my husband who happened to work on weekends.I prepared Chicken Hakka Noodles,Egg Fried Rice and Chilly Chicken.The fried rice came out very well.It was all because I left the cooked rice open in the refrigerator in the morning.In the evening when I looked at it,it was in the form that i wanted;dry,flaky and light.
Ingredients:
Makes for Two
Rice-1 Cup
Finely chopped(Cabbage,Beans,Carrot,Onions,capsicums)-1 Cup
Chopped Garlic-3-4 flakes
Egg-2 Nos
Vinegar-1/2 Tsp
Soy Sauce-1 Tsp
Fish Sauce-1 Tsp
Black Pepper powder-1 Tsp
Oil-1 Tsp+ 1 Tbsp
Salt-As per taste
Green Onion leaves-For garnish

Method:
1.Heat 1 Tsp oil in the wok and fry the eggs and scramble it properly.
2.Heat the wok on high flame.Heat 1 Tbsp oil,add the chopped garlic  and the chopped onions.Saute for a minute and add the remaining vegetables.
3.Add the cooked and frozen rice along with sauces,salt and pepper.Toss it on a high flame. Toss it for 2-3 minutes.
 4.Add the scramble egg and mix well.
 5.Garnish with green onion leaves and enjoy.

Notes:
1.For best results always use cooked and frozen rice.
2.Keep the wok on high flame while tossing the rice.Be careful not to burn it.

Mixed Basket

Its been a long time since I blog last.Both personal and professional life is keeping me very busy now a days.I have not stopped cooking delicious food;its just that i haven't used my laptop since ages.If I have to check my mails or log in to any of the networking site,I use my smart phone.Anyways,I will be back on tracks soon.Here is the the recipe that I tried last weekend.
Ingredients:
Chicken Legs-4 Nos
Prawns-250 gms
Mackrel Fish(Small sized)-300 gms
Cut Vegetables(Onion,Beans,Capsicum,Tomato)-As per wish
Hung Curd-100 gms
Tandoori Masala-1 Tbsp
Turmeric-1/2 Tsp
Chilli Powder-1 Tsp
Red food Colour-1/2 Tsp
Salt-As per taste
Lemon Wedges-For garnish


Method:
1.Marinate the chicken,prawn,fish and vegetables separately with the ingredients mentioned above.


 2.This is how it looks.
3.Preheat the oven in grilled mode.Grill it at 180C for 30-45mins. 
4.Serve with lemon wedges and green chutney.
