Caramel Bread Pudding

Few days back I got a feedback from my friends and husband that I have baked a lot of cakes during the past couple of months (Post are due in the blog!!).Hence they suggested me to try hands on some other desserts.So here you go guys,my all time favorite and a very easy pudding recipe.

 Ingredients:
 Sweet bread Slices(White)-8
 Milk-1 1/2 Cups
 Sugar-6 Tsp
 Vanilla Essence-1 1/2 Tsp 
For caramel:
Sugar-5 Tsp
Water-3 Tsp

Method:
1.Mix in the crumbled bread slices with milk and sugar.When done,add vanilla essence.
 2.In a pan add sugar and water.Put it on low flame and let the sugar gets caramelized.
 3.Immediately transfer to the pudding bowl and let it coat evenly.Pour the bread-milk mixture on to it.
 4.Cover the pudding bowl with an aluminium foil and prick it on random places to make holes in it.
 5.Steam it in a rice cooker or normal cooker(without weight) for 15-20mins.
 6.Cool it and let it set in the fridge for 1-2 hours.
 7.Ready to serve.
Notes:
1.Be careful in the caramalization process.Sometimes it burns.Hence keep it in low flame.
2.If you are not using sweet bread,do increase the quantity of sugar.
3.can be garnish with almond flakes.

Goan Fish Curry

This recipe was cooked couple of months back.I am posting this so late because my laptop was not working for a long time.As mentioned in one of my previous post, I am very much inclined to south Indian food.And this dish just stole my heart during my first visit to Goa in 2003.

Ingredients:
Medium sized Pomfret-1
Coconut-1/2 Scrapped
Dry Kashmiri red Chillies-6/7 Nos
Ginger-A small piece
Garlic-3-4 big flakes
Onion-1 medium sized Chopped
Tomato-1 Medium sized chopped
Peppercorns-5-6
Coriander Powder-2 Tbsp
Methi Seeds-A Pinch
Tamarind paste-2 Tbsps
Turmeric Powder-1/2 Tsp
Jeera -1 Tsp
Lemon-1/2 Cut
Refined Oil-2 Tbsps
Salt-As per taste
Hot water-For the gravy
Method:

 1.Clean the fish and marinate the fish for 30mins by sprinkling salt and lemon.
 2.Following are the ingredients.
 3.Put the above ingredients along with coconut to make a smooth paste.
 4.This is how it will look.
 5.Add oil to a heated kadhai and then add the above paste.Fry the paste till oil separates.
 6.Add enough hot water to make the gravy.How much to add to depends to one's discretion.
 7.When the gravy comes to boil add the sliced pieces of fish and let it simmer for 4-5 mins.
8.Serve with hot plain rice.

Note:
1.The amount of tamarind varies.I wanted it to be little more tangy so added 2 Tbsp otherwise 1 Tbsp is sufficient.You can add raw mango as well.
2.The red chillies will give the colour to the dish so don't worry and add the mentioned amount.
3.Scrapped coconut can be replaced with coconut milk.

Yogurt Cake

Yogurt Yogurt..I love Yogurt!!I can simply have it with either salt or sugar.Lassi,Buttermilk,Yogurt chicken,Yogurt Fish,Yogurt Paneer..Whoa!!!I think it can be added to anything and everything.Finally a cake with yogurt.It turned out really well.I observed that its much more denser,soft and has got a shiny texture.A must try.



Ingredients:
All Purpose Flour-2 Cups
Sugar-1 Cup
Eggs-3
Butter-100gms
Thick Yogurt-1 Cup
Baking Powder-1 1/2 Tsps
Baking Soda-1/2 Tsp
Salt-1/4 Tsp
Vanilla Essence-2 Tsp
Method:
1.Sift all the dry ingredients twice.
2.Cream the butter and sugar till smooth.

3.Add eggs and beat till frothy and sugar is dissolved completely. 
 4.This is how it looks.
 5.Add curd and vanilla.Beat for another couple of mins.
 6.Add the sifted flour little at a time.Fold in the all flour with a wooden spatula.

 7.Grease a 9 inch cake tin.pour the mixture into it and bake in a preheated oven at 180C for 40-45mins.
8.When done,remove from oven and let it cool at room temperature.

Note:
1.I baked two cakes,a square and a round.
2.Use fresh and thick curd.

Potato Bun

I have prepared the plain dinner rolls(pav) several times and consider myself quite comfortable in baking those.Earlier when i started, I used to get scared in handling the yeast.It requires a lot of patience in fermenting the yeast.After several,(in fact i don't remember)failures i am finally somewhat comfortable in handling the yeast part now.Hence i tried this Potato Bun recipe.This one is my husband's as well as brother's favorite snack.When they had these the only remark that they gave was that I used the potato stuffing quite generously as the ones available in the local bakery shops hardly have potato inside!!!!

Ingredients:
For the Potato stuffing:
Potatoes-3 Big Nos
Frozen Peas-1/2 cup
Onion-2 Nos small
Jeera-1 Tsp
Turmeric Powder-1/4 Tsp
Chilly Powder-1/2 Tsp
Garam Masala-1/2 tsp
Oil-1 Tbsp
salt-As per taste
Coriander Chopped-few sprigs


Method:
1.Prepare the dough for the bun.
2.Pressure cook the potatoes.When cooked mash it properly.
3.Heat Kadhai and add oil.Add jeera and let it splutter.
4.Add the mashed potatoes and the masalas.
5.Fry it for sometime and add salt.
6.Remove from heat and add chopped coriander.
7.Line a baking tray and brush it with little oil.
8.Take each bun dough.Roll it in your hand to make a dent and stuff the potato mixture.
9.Roll it into a smooth smooth bun.Repeat the process for remaining ones.
10.Brush them with oil and let it sit in the baking tray.(In order to make them rise.This step is a must)

11. Preheat the oven at 190C and bake them for 15-20 mins.
12.Serve Hot with Chai or Coffee.

Baked Penne with fried Potato & Aurbugines

My laptop is dead.Whatever I cooked and clicked recently was transferred to my laptop.Since it has gone for repair i am now digging into my husband's laptop to see if any of my recipes are there.And hurray! I got few.So here is the one.


Ingredients:
Penne pasta-2 Cups
Capsicum(Green,Red,Yellow mixed) chopped-3/4 Cup
Onion(medium) chopped-1
Tomato(big)-3 nos
Ginger-Garlic paste-1 Tsp
Potato(Medium)-3 nos
Aurbugines/Brinjal(small)-2 Nos
Pepper Powder-1 Tsp
Chilli Flakes-1 Tsp
Dried Herbs/Oregano-1Tsp(OPTIONAL)
Oyster Sauce-1 Tbsp
Soy Sauce-1 Tbsp
Grated Mozzarella Cheese-1/2 Cup or more
Salt-as per taste
Oil-3 Tbsp

Method:
1.Boil enough water in a pan.Add the penne pasta to it and cook till its al dente(Cooked untill just tender).Drain the water and let it stand for some time.
2.Heat oil in the pan and add sliced onions and ginger garlic paste.Saute for few mins and then add the capsicums.

3.Add the tomato puree made out of three tomatoes.

4.Now add the dry powders,sauces and salt.


5.Add the penne and mix well. 
6.Immediately transfer to a baking dish.

7.Deep fry the potato and aubergine pieces till slight golden brown.
8.Add the fried potatoes and aubergines on top of the pasta.

9.Garnish with loads of grated mozzarella cheese. 
10.Bake it in a preheated oven at 150C either for 10-15 mins or till cheese melts.Enjoy HOT!!!

Notes: 
1.Quantity of cheese can be used as per choice.I used more than mentioned.
2.To cook the penne,the ratio of pasta to water is 1:10.
3.You can garnish with fresh basil leaves.

Mango loaf cake

"While coming back home in the evening,i picked some mangoes..the first of this season..I was simply craving for mangoes today.Had a whole one first,then had it with vanilla ice cream and cream and now finally at 11.30 in the nite,im baking a mango loaf cake..HUH!! I guess this is called mango mania".This was my status message in one of the networking site last Thursday night.The cake looked great and taste awesome.A perfect try this season.My mom gave me an
idea to bake another one soon with ripe jack fruit pulp.

Recipe adapted from Divya Kudua
Yields a 8X4X2
Ingredients:
Fresh Mango Puree-1/2 Cup
Sour Cream/Thick Yogurt-1/2 Cup
All purpose flour-1 1/2 Cup
Sugar-1 Cup
Baking Powder-2 Tsp
Vannilla Essence-2 Tsp
Salt-1/4 Tsp
Oil-1/2 Cup
Eggs-2


Method:
1.Preheat the oven to 170/180C.
2.Sift the dry ingredients namely flour,baking powder and salt.

3.In a mixing bowl put mango puree and yogurt.Blend well in a high speed for few seconds.(I added chopped pieces with curd in the bowl and then blend it to make a puree.You can do either way.)
4.Add eggs and whisk for a couple of minutes till its frothy.Add vanilla essence and sugar to it.Blend at high speed till sugar is dissolved.
5.Add the dry ingredients and fold in smoothly with a wooden spatula.
6.When all the flour are mixed in add the oil and mix well.
7.Pour the batter in the loaf pan and bake it for 40-45mins.


Notes:
1.This cake can be bake in a 9 inch round cake pan too.
2.Temperature can be either 170 or 180C.The convection oven that i have has 180.For me it too exactly 37 mins.
3.always use egg at room temperature.
4.If possible sift the dry ingredients at least twice.
5.Always use fresh baking powder.
